In contrast to the rapid roasting used in industrial coffee processing, they are refined in drum roasters with plenty of time and patience. As the metal drum rotates, the beans are kept in constant motion to ensure a beautifully even roast. The roast master regulates the heat by adjusting the gas flame and can also control the drum ventilation (this determines how quickly heat is transferred to the beans). Left for 12 to 14 minutes at approx. 400°F, our coffee unfolds its opulent aromas and yields wonderfully delicate, refined acidity.
