Stovetop coffee pot, noun (also called Moka Express): The octagonal classic from Italy. Although it’s sometimes called an espresso maker, it actually doesn’t make espresso as the water pressure would be insufficient (14 psi instead of 130), but it does make a very delicious cup of coffee. Important: Place finely ground coffee (slightly coarser than for espresso machines) loosely into the portafilter, then fill with warm or hot water. As soon as the pot starts to “rattle,” remove it from the stove.
