Why is coffee bitter?

“Coffee is too bitter for me,” we sometimes hear. Too bad. Because, actually, it isn’t bitter at all. But if it is, it’s probably because the water was too hot during brewing.

The ideal water temperature is 197-205°F. In other words, not boiling! Otherwise, the coffee will taste bitter, possibly even acrid. Which, incidentally, is also often to blame if it comes out the coffee machine tasting funky. However, there are machines with quality seals, such as the European Coffee Brewing Centre, where you can be pretty sure that the brewing temperature is just right.

Note: If the water is colder than 185°F, your coffee won’t taste great either – it’ll be watery, possibly even sour.
